El 97% de los olivos son de la variedad Nocellara del Belice; cultivar de crecimiento modesto, con ramitas de frutos colgantes, autoincompatible, de productividad constante, frutos grandes (5 &#8211; 7 gramos) de forma casi esf\u00e9rica, pulpa firme y crujiente, color verde intenso antes del envero que se torna rojo vinoso al madurar. La pulpa representa el 85% de toda la drupa, el rendimiento de aceite ronda el 18 &#8211; 20%, la calidad es excelente; por esta raz\u00f3n se considera un cultivar de doble prop\u00f3sito (aceite &#8211; mesa). Il loro unico scopo \u00e8 quello di impollinare la Nocellara del Belice, con esclusione della Cerasuola, dato che \u00e8 androsterile.
